WHAT IS MISE EN PLACE?
(French pronunciation: [mi zɑ̃ ˈplas])
It is a French phrase that means "putting in place", as in set up. It is used in professional kitchens to refer to organising and arranging the ingredients that a chef will require for the menu items that are expected to be prepared during a shift.
Mise en Place is a global Gault&Millau initiative, designed to give restaurant professionals the opportunity to engage with Australia's world-class producers and suppliers. Mise en Place will feature premium exhibitors, masterclasses, cooking demonstrations, a mixology lounge and more.
At Mise en Place, Gault&Millau Australia will celebrate and recognise restaurants and individuals who have made exceptional contributions to the Australian restaurant industry, through its annual awards program.
The key-decision makers (senior Chefs, Restaurateurs, Restaurant Managers, Sommeliers, Bar Managers and senior Front-of-House staff) in each of the restaurants published in the Gault&Millau Restaurant Guide are sent an invitation to attend the event. At each Mise en Place event, we anticipate 80-300 guests will attend.
